About the Chef
Born and raised in Boston, Massachusetts, I began my career working in country clubs and hotels in New England, including the famed Parker House Hotel. I moved to Orlando with Omni Hotels and later joined the opening culinary team for Universal Studios Orlando. Within Universal, I opened and spent 15 years as the Executive Chef of CITYWALK and over 30 years in total. I was instrumental in opening the food services within the Wizarding World of Harry Potter, and I oversaw the culinary opening at Volcano Bay.
After nearly 40 years as a chef, I have found myself in a truly blessed position enjoying multiple culinary roles. I enjoyed a few years as a Youth Educator for Universal Orlando. Our youth division sold to school groups and youth organizations. I had the privilege of teaching Culinary, leadership, careers, Business leadership and science classes to middle school through high school aged kids.
In my other role, I am a Chef with Spherion Services which contracts food services for NASA at Kennedy Space Center. I prepare dinner service for the astronauts and crew while they are in quarantine. I just completed my 11th launch service.
I’ve been a member of the American Culinary Federation, Central Florida Chapter, for over 30 years and have held many board positions including chapter president. I’ve been blessed with many great opportunities of fellowship, leadership, volunteering and competitions.
